Chocalate Crinkles: Last Minute Holiday Cookies

Christmas cookies are an absolute favorite of mine. So, I thought I’d share one of my favorite recipes, chocolate crinkles!

What you’ll need:

  • 3 beaten eggs
  • 1 1/2 cups sugar
  • 4 squares (four 0z. unsweetened chocolate)
  • 1/2 cup cooking oil
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla
  • 2 cups all purpose flour
  • sifted powder sugar

Time to mix:

  • In a large mixing bowl stir together: the beaten eggs, sugar, melted chocolate, cooking oil, baking powder and vanilla. Gradually add flour to the chocolate mixture stirring till thoroughly combined. Cover and chill for 1 to 2 hours till the dough is easy to handle. Shape dough into 1-inch balls. Roll the balls into powdered sugar to coat. Place balls 1 inch apart onto ungreased cookie sheets. Bake in a 375 degree oven for 8 to ten minutes or till edges are set and tops are cracked. Remove cookies and cool on wire racks. If desired, sprinkle with additional powdered sugar. This makes about 48 cookies.
